It seems that no matter where you go, grabbing a meal at a food truck is a growing phenomenon. At this point in the Lansing area, if you want to patronize a food truck, there probably is one running somewhere. You just need to figure out where they are from day to day. New to the food truck trend, though, could be the idea of a food truck court. One of them has sprung up in Lansing.When you think food court, you think of the dining area of a shopping mall, with tables surrounded by the vendors. A food truck court is a bit different. The trucks come to the same spot every day, and patrons have their choice from the operations that happen to be there that day.
Current State's Scott Pohl spoke with a few of the people involved, including property owner Gary Ganakas and Donnie Opolski of Michael O's. This food truck court was the idea of Frank Tigninelli of Detroit Frankie’s Wood Fired Brick Oven. He makes pizzas in a mobile wood-fired oven.
